How food Evolved?

  • 1,800,000 BCE · Cooking begins with Fire

    With farming came harvests, seasons, and surplus. Once people could grow and store grains and raise animals, the idea of preserving food became part of everyday survival.

  • 3,000 BCE · Drying, salting, fermenting

    Drying, salting, pickling, and fermenting helped food survive long journeys and lean months. Many traditional Indian food habits, including pickles, podis, and preserved preparations, follow this timeless logic of flavour made to last.

    Canning

    Canning introduced a major shift by proving that sealed, heat-treated food could last for months. It changed how cities and armies were fed, even though the method was often heavy and and the long, fierce cooking often dulled taste and texture.

    Cold chain

    Refrigeration made large-scale food distribution easier and changed how people stored everyday ingredients. But it also made modern food systems dependent on constant electricity, storage space, and cold transport.

    Space-era food science pushed preservation further by demanding meals that were safe, lightweight, durable, and easy to consume with limited resources. Retort pouch technology emerged as one of the practical answers to that challenge and later became important for shelf-stable foods on Earth.

    A retort pouch is a flexible, high-barrier package that allows sealed food to be heat-processed for commercial sterility and long shelf life. It is designed for room-temperature storage, and widely used for ready-to-cook meals, soups, sauces, and similar foods.
